Rainy day surprise pasta & 10 minute tomato sauce

Isn't it amazing when you put your mind to something  you can actually do it. So for quite some time my bf has been telling me he's going to make me dinner. It was an amazing surprise when I came home from the gym to see a plate full of hand made ravioli. He had watched the Jamie Oliver demo on how to make your own pasta dough. He did an excellent job using the left over goats cheese, sun dried tomatoes and spinach as the filling. He said he didn't know how to make sauce, and asked if I would show him. For those if you who know my bf know that he doesn't really take action in the kitchen so this meal really goes down in the books.  I taught him how to make a 10 minute tomato sauce and we enjoyed our afternoon of Italian deliciousness. 10 Minute tomato sauce INGREDIENTS:
1 can crushed tomatoes
2 garlic cloves
1 cooking onion
dried oregano
splash of red wine (optional)
carrot - finely shredded
parsley
salt and pepper
red pepper flakes (optional)
PREP: chop onion, garlic and parsley.
COOK: sautee onion and garlic until golden, add oregano & red pepper flakes then tomatoes and splash of wine - red or white whatever you have as well as shredded carrot. Adjust seasoning (S & P). Simmer for 7 minutes. Take off heat and puree in blender, put back into hot pan add chopped parsley, leave on heat until ready to use.
SERVE: Put hot pasta (straight from cooking water) into hot sauce before serving. Grate parmesan cheese over top. Enjoy
