Sexy side salad with roasted fruit and veg INGREDIENTS:
baby spinach
1 purple carrot
2 jerusalem artichokes
2 beets
1 pear
1 apple
1 lemon
salt & pepper
olive oil
honey
PREP: Cut all veg & fruit into slices drizzle with olive oil and roast in oven for 30 mins or so at 350. If you like to char them a bit longer thats fine they taste even more delicious that way. Let everything before assembling the salad.
DRESSING: add 2 part olive oil to 1 part lemon juice, add dollop of honey s&p.
SERVE: toss spinach with the dressing, and place veggies and fruits around the plate. Enjoy
TIP: you can roast the veggies a day or two in advance.
